What is your favorite undiscovered grape? It’s unfair to ask us this! So, let’s go with the two rarest grapes we grow. On the white side Picardan. When we planted our half-acre it increased the world’s footprint by 40%. And on the red side, Vaccarese, where when we bottled it in 2019, we think it was the first 100% Vaccarese from anywhere in the world in 50+ years.

What was your first experience with an undiscovered grape? My first wine tasting memory — the first time I remember tasting a wine and understanding what the adults were talking about — was Gewürztraminer. It really did taste like rose petals, which I thought was so cool.

What do you love most about the undiscovered grapes? They offer an incredible variety of flavors and character, thrive in a variety of climates and soils, and can be remarkably valuable in blends as well as on their own.

About: Kitty Oestlien and Shelley Lindgren founded Tansy Wines in 2020 with friendship and camaraderie at the core, and haven’t looked back. It started with a conversation around a table at Shelley’s A16 restaurant, known for introducing southern Italian wines to diners. They talked about how well these varietals grow in California, and what an incredible adventure it would be to make these wines themselves.

As they started down the path, they also saw an opportunity to create a modern wine brand, one that is owned by women, made by women, and is synonymous with the things they hold near and dear—community, organic, and sustainable farming, and sitting around a table. They’re still building that vision, and thank you for joining them on the journey.

What is your favorite undiscovered grape?

Shelley – Ruche is a small percentage of what is in our Field Blend, but its lavender and floral aromatics are the first notion that there is something wonderful and magical happening, unique to its small production in Italy and even smaller in California.

Kitty – Too hard to choose. We love Fiano.

What was your first experience with an undiscovered grape?

Shelley – Being an Italian-focused sommelier, there is a world of forgotten grapes being rediscovered and enjoyed more than ever before. With such a deep history of viticulture and agriculture, including grapes as a big part of the economy and culture, wine is preserved as a part of the local lifestyle and is important to the heritage and history of Italians. Many of the Italian grapes were planted in the late 1800s in California and are currently having a resurgence.

Kitty – Years ago, I remember that I was dining at A16 and I felt like a Chablis, so Shelley Lindgren recommended a Sicilian Carricante. Wow, DELICIOUS. This changed my perspective on white grape varietals, for the better.

What do you love most about the undiscovered grapes? 

Shelley – Undiscovered grapes tell their story of survival and journey of where they originated and what life was like during their journey, mostly through Europe to the New World.

Kitty – I love how well they pair with the locally farmed fruits, vegetables, and meats that are available in California. Napa and parts of Sonoma have climates that mimic parts of Italy, so the pairings are perfect! I also love the history and origins of these grapes. It’s a great way to learn more about the world!

Can’t remember the first time, but I’ve been tasting European wines for decades now and wines such as Spanish Albariños & Tempranillos, Italian Barolos and Veneto wines, Austrian Grüner Veltliner, French Tannat & Rosés of Grenache have always piqued our interest.

What do you love most about the undiscovered grapes? I love bringing new experience to people who might not have even heard of such varietals.

Wines are made in his own facility, from unusual varietals, like Picpoul, Pinot Meunier, and more. Nicknamed “the insane master of small lots” William guides ~15-20 unique wines a year ranging from 25-400 case lots.

About: Ulloa Cellars is a Latina Winemaker-owned brand based in Paso Robles, specializing in the production of obscure white wines made with intention and a little bit of magic. Nancy began her winemaking journey in 2019 with the creation of her Baby Grüner, a Grüner Veltliner sourced from the historic Paragon Vineyard in Edna Valley. Baby Grüner has become her signature wine and holds a very special place in her heart. The growth of her brand is reflected in the expansion of her production now including 8 obscure varieties such as Picpoul Blanc, Vermentino, Verdejo, and Sémillon, amongst others. Nancy also recently launched a sister brand called “The Witch & The Warlock” with her Husband, Tim Small, focusing on obscure reds including Tannat, Gamay, and Sangiovese.

Nancy’s wines have captured the hearts of many, not only because of how special the varieties she works with are, but because she uses spiritual and metaphysical methods to infuse her wines energetically. She utilizes tools such as Sanskrit Mantra chanting, positive affirmations, Goddess energy, and Crystal Healing. She also offers Wine & Crystal Pairings for $11.11 in her Paso Robles tasting room, in which she teaches her guests different ways to use the crystals and other healing methods to empower them to find sustainable ways to enhance their lives and take care of their mental health. What is your favorite undiscovered grape? My favorite undiscovered grape to work with is Grüner Veltliner, not because it is the first wine baby I produced, but because when grown in California, it can create a full-bodied, complex, savory wine that can turn Red Wine Drinkers into White Wine Lovers.

What was your first experience with an undiscovered grape? The catalyst for my obsession with obscure whites was Picpoul Blanc. It tasted like nothing I had tasted before, and it really was my “A-ha” moment for the direction I wanted to pursue as a winemaker. The textures, acidity, and complexity were incredible, and that was a turning point in my search for sensory experiences through discovering all the unusual varieties grown in the Central Coast.

What do you love most about the undiscovered grapes? I love the fact that you can have a sensory experience that can transport you to places you’ve never been. It opens up the doors to pursuing and trying things you’ve never tried. LIFE IS TOO SHORT TO DRINK CHARDONNAY!

What is your favorite undiscovered grape? We love our white wine portfolio (Chenin Blanc, Grenache Blanc, Picpoul Blanc), but equally so, we’ve had the opportunity to work with Grenache throughout AVA’s on the Central Coast, which is a dynamic line-up to experience in a vertical tasting to experience the different terroirs from Paso, Edna Valley, and Santa Barbara County.

What was your first experience with an undiscovered grape? Picpoul Blanc. I discovered it early in my wine marketing career at a winery where it was used in a white Rhone blend. I had the opportunity to taste it on its own and was excited by its flavor profile, which featured great acidity and liveliness on the palate. It’s a fun wine and perfect to have on-hand for entertaining – a real conversation starter!

What do you love most about the undiscovered grapes? Always great for both longtime wine enthusiasts and novices alike to explore an undiscovered grape variety – a lovely introduction to a new discovery!

What is your favorite undiscovered grape? Barbera, Souzao, and Viognier

What was your first experience with an undiscovered grape? Making Viognier for the first time in 2024 was a revelation. This grape used in Condrieu primarily tends to be picked over-ripe in California, which makes it a perfume bomb but lacking in weight. We pick ours at 20.5 brix, resulting in a wine that is only 12% alcohol but exhibits orange blossom, flint, and hazelnut and has substantial mid-palate weight.

What do you love most about the undiscovered grapes? Wine is a product of context. By context we mean varietal, weather, soil, and all the traditional definitions of terroir. But context also refers to the context you drink it in. There’s a different wine that’s perfect for each mood, for each food, for each moment. With undiscovered grapes, you get to match the moment with the grape. It’s like having a million musicians in your orchestra to choose from, rather than just the most famous 5. And that’s why we love undiscovered grapes. They widen your horizon, they widen your appreciation of wine, and in fact, they widen your taste.

What is your favorite undiscovered grape? Vermentino. We have been strategically looking for white grape varietals that thrive in East Paso Robles. A neighbor and long-time grower planted some experimental whites up the road from us. We bought a ton from him three years ago and have been in love with the grape ever since. It ripens beautifully, fully expressing its flavors while maintaining acidity. We plan to plant several acres of Vermentino in the next couple of years.

What was your first experience with an undiscovered grape? My first experience with lesser-known grapes was chilled reds like Gamay and Cinsault. Thacher Winery in Paso Robles had a winemaker at the time who loved experimenting by picking early, doing some stem inclusion, as well as some carbonic maceration. The flavors of these varietals were bursting out of the glass without needing heavy body or higher alcohol to express themselves.

What do you love most about the undiscovered grapes? Variety is the spice of life. We are blessed in Paso Robles to have so much diversity, from varietals planted to terroirs, winemaker styles to old trends turned new again.
